Che Chi

1 1/2 ounces vodka

4 ounces pineapple juice

1 ounce cream of coconut

1 slice pineapple

1 cherry

Who is Che Chi? What man can make such delicious Italian sausages? I tried to get an interview, but he prefers to maintain his mysterious persona. You may have heard of the Chi Chi, but this drink is better. I give you Che Chi.

Whether you say "ch-ee ch-ee" or "ch-ay ch-ee," this is a drink to honor our favorite sausage vendor. I've gotten in heated debates on the Boston College bus about the correct pronunciation, but who hasn't? No matter which way you pronounce it or which recipe you choose, this beverage will put a smile on your face ... just like Che Chi's sausages.

Grab a Collins glass and a blender. Pour one cup of ice into the blender and add vodka, pineapple juice, and the cream of coconut. Blend at high speed until smooth. Pour your delicious beverage into the glass, garnish with pineapple and cherry, then serve.

The drink I just described is for those of you who pronounce is "ch-ee ch-ee." For the "ch-ay ch-ee" folks, I have another recipe. It calls for 1 ounce orange liquer, 2 ounces cream of coconut, 2 ½ ounces of vodka, and 4 ounces of pineapple juice. Blend with ice and serve. Not quite as dark and mysterious as Che Chi, but mmm, just as delicious.
