Pumpkin Pie

Think back to your favorite Thanksgiving moment. Chances are, the memory includes a smattering of turkey, stuffing, family dysfunction and… pumpkin pie. Well who says that pumpkin is just for Thanksgiving? To bridge the gap between Halloween and Turkey Day we have a yummy recipe for the orange slice of deliciousness.

1 cup firmly packed brown sugar

2 tablespoons flour

2 teaspoons cinnamon

1/2 teaspoon salt

1 15oz. can pumpkin

1 egg

1 12oz. can evaporated milk

1 deep dish pie shell

Preheat oven to 350 degrees. In large bowl mix brown sugar, flour, cinnamon and salt. Stir in pumpkin. Blend in egg and evaporated milk. Pour mixture into unbaked pie shell. Bake at 350 degrees for 50 - 60 minutes until knife inserted 2 inches from edge comes out clean. Cool completely. Refrigerate left-overs.
